Step-by-Step Instructions


Step 1: In a large saucepan, combine the whole milk, granulated sugar, rice flour, and cornstarch. Whisk thoroughly over medium heat until completely smooth and free of lumps.


Step 2: Cook the mixture, stirring constantly with a wooden spoon or spatula, until it thickens to a rich, pudding-like consistency and starts to bubble.


Step 3: Remove the pot from the heat, stir in the butter and vanilla extract until fully melted and incorporated into the warm pudding.


Step 4: Generously dust the bottom of a wide, shallow metal tray or baking dish with the powdered sugar. This is the secret ingredient that forms the iconic caramelized bottom layer.


Step 5: Pour a thin layer of the prepared pudding over the sugared tray, then gently pour the rest. Place the tray directly over medium-low heat on the stovetop, rotating it slowly so the sugar at the bottom caramelizes evenly without burning.
