Step-by-Step Instructions
Step 1: In a large mixing bowl, combine the flour, salt, sugar, and yeast. Gradually add the warm water while mixing. Knead the dough for about 10 minutes until soft and smooth. Cover the bowl and let it rise in a warm place for 1 hour until doubled in size.
Step 2: Prepare the two fillings. For the cheese filling, mix the cottage cheese with salt, oil, and chili flakes. For the potato filling, mash the boiled potatoes and stir in the butter, salt, black pepper, and paprika until creamy.
Step 3: Punch down the risen dough and divide it into 8-10 equal-sized balls. On a floured surface, roll each dough ball into a thin, round flatbread about the size of a dinner plate.
Step 4: Heat a large dry skillet or traditional griddle over medium-high heat. Cook each rolled flatbread for 1-2 minutes per side until golden brown spots appear. Keep the cooked flatbreads warm in a clean kitchen towel.
Step 5: While the flatbreads are still warm and pliable, lay one flat on a plate. Generously spread one of the fillings over half of the flatbread. Roll it tightly into a firm cylinder or wrap.
Step 6: Serve the freshly rolled wraps immediately while warm, traditionally enjoyed alongside a hot cup of black tea.
Chef's Closing Tip
The key to a perfect wrap is working quickly while the flatbread is still hot from the pan, ensuring maximum flexibility for rolling without cracking.
