Step-by-Step Instructions


Step 1: Place the fine bulgur into a wide mixing bowl. Pour the warm water over it, cover, and let it absorb the liquid for about 10 minutes until softened.


Step 2: Add the grated onion, minced garlic, pepper paste, and tomato paste directly onto the softened bulgur.


Step 3: Sprinkle in the cumin, red pepper flakes, black pepper, and salt.


Step 4: Begin kneading the mixture firmly with your hands, pressing and rubbing the bulgur against the bowl to blend all the flavors together seamlessly.


Step 5: Gradually pour in the olive oil and pomegranate molasses while continuing to knead vigorously for another 10-15 minutes until the mixture becomes smooth, cohesive, and easy to shape.


Step 6: Squeeze portions of the mixture in your palm to form traditional finger-shaped pieces, or wrap some inside a fresh lavash with greens. Serve immediately with lemon wedges, crisp lettuce leaves, and ice-cold ayran.
