Step-by-Step Instructions
Step 1: Rinse the white rice thoroughly in a strainer with cold water until the water runs clear.
Step 2: Place the rinsed rice and 1 cup of water into a medium saucepan. Bring to a boil over medium heat, then lower the heat and simmer until the rice absorbs all the water and becomes very soft.
Step 3: Pour the whole milk into the saucepan with the cooked rice. Stir well and bring the mixture to a gentle boil over medium heat.
Step 4: Reduce the heat to low and let it simmer for about 20-25 minutes, stirring occasionally so the bottom does not burn.
Step 5: In a small bowl, dissolve the rice starch in a few tablespoons of cold water until smooth. Slowly pour this mixture into the simmering pudding while stirring constantly.
Step 6: Add the granulated sugar and vanilla extract. Continue to cook and stir for another 5-7 minutes until the pudding thickens to a creamy, velvety consistency.
Step 7: Remove from heat and ladle the warm pudding into heat-resistant ramekins or serving bowls. Let them cool to room temperature, then place them in the refrigerator to chill for at least 2 hours.
Chef's Closing Tip
