Step-by-Step Instructions
Step 1: Prepare the cold sugar syrup in advance by boiling the sugar, water, and lemon juice together for 10 minutes. Let it cool completely, then place it in the refrigerator so it is ice cold when the hot pastry goes in.
Step 2: In a medium saucepan, combine the warm water, butter, sugar, and a pinch of salt. Bring to a boil over medium heat.
Step 3: Add the flour, semolina, and cornstarch all at once. Stir vigorously with a wooden spoon over low heat for 2-3 minutes until the dough gathers into a smooth ball and pulls away from the sides of the pan. Remove from heat and let it cool slightly.
Step 4: Crack the eggs into the warm dough one at a time, beating thoroughly after each egg until fully incorporated and the dough is smooth and glossy.
Step 5: Transfer the sticky dough into a sturdy pastry bag fitted with a star tip. Squeeze ring shapes directly onto small squares of oiled baking paper or straight into warm (not hot!) vegetable oil, cutting the dough with oiled scissors.
Step 6: Turn the heat to medium and fry the rings slowly until they turn deeply golden, crispy, and firm on both sides (about 6-7 minutes).
Step 7: Remove the fried rings with a slotted spoon and drop them immediately into the cold sugar syrup. Let them soak for 30-45 seconds, then transfer to a serving plate.
