Step-by-Step Instructions
Step 1: Boil the potatoes in their skins until fork-tender. Peel them while still warm and chop them into bite-sized pieces or gently mash them in a wide mixing bowl.
Step 2: Separately, boil the eggs until hard-boiled (about 10-12 minutes), peel them, and chop them coarsely into the same bowl with the potatoes.
Step 3: Add the finely sliced green onions and freshly chopped parsley to the potato and egg mixture.
