Step-by-Step Instructions
Step 1: Prepare the syrup first so it has time to cool. In a small saucepan, combine the water and sugar. Bring to a boil, then reduce heat and simmer for 10-12 minutes. Stir in the lemon slice, remove from heat, and set aside to cool completely.
Step 2: In a large bowl, separate the shredded kadayif dough strands with your hands, ensuring they are not clumped together. Pour the melted butter and date molasses mixture over the kadayif. Step 4: Evenly spread the sliced or grated cheese over the kadayif base, leaving a small margin around the edges to prevent the cheese from sticking and burning.
Step 5: Cover the cheese layer with the remaining kadayif dough, pressing down gently but firmly to seal the cheese inside completely.
Step 6: Cook the kunefe on the stovetop over medium-low heat. Rotate the pan continuously for about 6-8 minutes, ensuring the bottom browns evenly and gets perfectly crispy. Shake the pan occasionally to make sure it's not sticking.
Step 7: Once the bottom is golden brown (you can carefully check the edge with a spatula), place a large plate or another flat pan over the kunefe and carefully invert the pan to flip the kunefe. Slide the un-browned side back into the pan and cook for another 5-7 minutes until the second side is equally crispy and golden.
Step 8: Remove the hot kunefe from the heat. Immediately pour the cooled syrup evenly over the sizzling hot kunefe. It should bubble as it absorbs the sweet liquid.
Step 9: Let the kunefe rest for 1-2 minutes to absorb the syrup. Garnish generously with the finely crushed Antep pistachios. Serve immediately while still warm and the cheese is melted and stretchy, optionally topped with kaymak or ice cream.
